So as you know, I’m all about quick & easy recipes! I workout in the mornings & dont have much time to prepare bfast in the morning so I usually prep the night before. For this weeks on the go bfast, I made some delish bite sized egg white muffins! So easy & of course you can add more goodies but I stuck to veggies. Enjoy!
-this made enough for two servings
4 egg whites
mini muffin pan (or regular sized)
– preheat oven to 375 degrees
– combine 2 eggs & 4 egg whites
– whisk until fluffy
– chop tomatoes & spinach
– combine ingredients & stir
– spray muffin pan w/ non stick spray
– pour mixture into molds
– bake for 15 – 20 minutes
– set for 5 minutes
It’s that easy, place them into individual ziplock bags or plastic containers & they’re ready for you to just pop in the microwave or eat them cold. You can easily add any other ingredients, like cheese, bacon (mmm bacon) or more veggies! Try it out & let me know how they turn out.
